Recipe: Three Apple Cake

SERVES:
makes one 9 x 13-inch baking dish
INGREDIENTS:
4 cups peeled, cored, diced baking apples (5-6 apples total...peel and dice apples after measuring the rest of the ingredients)
3 cups all-purpose flour
1 packed cup light brown sugar
1 tsp kosher salt (or 1/2 tsp table salt)
1 tsp baking soda
1 tsp ground cinnamon
1 cup unsweetened applesauce
3 large eggs
1 tsp vanilla extract
1/2 cup apple cider
0ne buttered 9 x 13-inch baking dish
PROCEDURE:
Preheat the oven to 350 degrees and also measure out all of your dry and wet ingredients before peeling and dicing the apples, you're looking for 4 cups of 1/2-inch diced apple total.
Use a large mixing bowl to combine 3 cups all-purpose flour with 1 packed cup of light brown sugar, 1 tsp kosher salt (or 1/2 tsp table salt), 1 tsp baking soda and 1 tsp ground cinnamon and mix that up and break the brown sugar up a bit.
Then add 1 cup unsweetened applesauce, 3 large eggs, 1 tsp vanilla and 1/2 cup apple cider, mix that together, fold in the diced apples, transfer it to a buttered 9 x 13-inch baking dish and place it onto the center rack of the preheated oven.
That's going to take just about 40 minutes to bake and you'll want to spin the baking dish halfway around halfway though.
Use a toothpick to check it for doneness.
HINTS:
This is a very moist cake and the applesauce gives it a different texture than a typical cake.
