Recipe: Candied Spiced Walnuts

SERVES:
makes approx. 4 cups

INGREDIENTS:

1 pound walnut halves and pieces
1 cup powdered sugar
1 tsp kosher salt (or 1/2 tsp table salt)
1/2 tsp ground cayenne pepper


PROCEDURE:

Preheat the oven to 350 degrees and also get a large, deep pot of water going for blanching the walnuts.

Make sure the water level is such that, when you add the walnuts, it doesn't cause the water to overflow and then, once the water does come to a boil, add the walnuts....let them boil along for 30-40 seconds....and then drain them through a colander in the sink.

While they're still nice and hot, add the well drained nuts to a large mixing bowl and add the one cup of powdered sugar.......add 1 tsp kosher salt and 1/2 tsp ground cayenne pepper and toss everything together until the sugar has melted onto the nuts.

Transfer that to a large heavy bottomed baking tray and transfer the tray into the preheated oven.

They'll take about 20 minutes to roast and you'll need to stir them around once in a while as they're roasting and stir them around as they're cooling down as well....so they don't stick to the pan or each other.

HINTS:

Use pecans or a combination of walnuts and pecans.
Store in airtight container at room temperature.
It's easy to double this recipe....just count on one cup of powdered sugar to one pound of walnuts.
