Recipe: Fruit Salad with Cinnamon Toast and Vanilla Yogurt

SERVES:
4-6

INGREDIENTS:
3 apples
2 large bananas
3 oranges
approx. 2-3 cups seedless grapes
2 Tbs fresh chopped mint (optional but good)

4-6 slices white country style bread
soft butter as needed
cinnamon sugar as needed
vanilla yogurt as needed

granola as needed (optional)


PROCEDURE:

To make the cinnamon sugar, combine 1/4 cup sugar with 1 Tbs ground cinnamon.....mix it up......and add it to a shaker.

Cut the fruit for the fruit salad (cut the things like bananas and apples last).......and then squeeze a little more citrus over the top....orange, lemon or even lime juice....to help keep the fruit from oxidizing, add some chopped mint if you're using it and toss everything to combine.

At this point toast the bread and, while it is still nice and warm, spread some soft butter over the top and then sprinkle on a generous amount of the cinnamon sugar.

Cut the bread in half into triangles and divide it onto plates.....and then top that with some of the fruit salad....put a dollop of yogurt on top....and finish with an optional sprinkling of granola.

HINTS:

It's up to you what kind of fruit you want to use in the fruit salad.
