Recipe: No Bake Chocolate Oatmeal Cookies

SERVES:
Approx. 3 dozen cookies

INGREDIENTS:

  • 1 stick unsalted butter

  • 1 3/4 cup white sugar

  • 6 Tbs unsweetened cocoa powder

  • 1/2 cup milk

  • 3 1/2 cups old fashioned oats

  • 1/2 cup creamy peanut butter

  • 2 tsp vanilla extract

  • Sea salt for garnishing each cookie (optional but fantastic)

  • Wax paper for lining tray

PROCEDURE:

Use a deep, stainless steel pot to combine 1 stick of unsalted butter with 1 3/4 cup white sugar, 6 Tbs unsweetened cocoa powder and 1/2 cup milk and bring that up to a simmer.

Once everything has melted and is nice and smooth, adjust the heat so it stays at a nice simmer and let it cook along for a couple of minutes.

At that point, add 3 1/2 cups old fashioned oats, stir those in and turn the heat off.

Once the oatmeal is mixed in, add 1/2 cup smooth peanut butter to that and 2 tsp vanilla extract and mix that together until everything is completely combined.

Next, use a couple of teaspoons to shape that mixture into individual cookies and place those on wax paper lined baking trays and then, if you want to, you can finish with a pinch of sea salt over the top of each one.

These will take just about 1 hour to set up and then they will be good to go.

HINTS:

Use natural, no sugar added peanut butter if you can but not necessary.
