Recipe: Gluten Free Peanut Butter Cookies

SERVES:
2 dozen
INGREDIENTS:
- 1/2 cup white sugar
- 1/2 cup light brown sugar
- 1 large egg
- 1 tsp baking soda
- 1 cup creamy peanut butter
- Parchment paper for lining baking tray(s)
PROCEDURE:
Preheat the oven to 350 degrees making sure there is one rack placed in the center position of the oven.
Use a mixing bowl to combine 1/2 cup white sugar and 1/2 cup light brown sugar with 1 large egg and mix that until it is well combined....then add 1 tsp baking soda and 1 cup of creamy peanut butter and mix until it forms a ball of dough.
Next, use your hands to roll that mixture into 1 - 1 1/2 inch thick balls and place them on a parchment paper lined baking tray.
Use a fork to make a crisscross pattern on top of each one....but don't press them down too much because you don't want them to be too brittle when they are done baking.
Once the oven is ready to go, put the tray onto the center rack....they'll take just about 10-12 minutes to bake and it's a good idea to spin the tray around once about halfway through.
HINTS:
You may choose to use two baking trays so that the cookies don't expand into each other as they the flatten and bake.
Unlike other cookies, you'll want to let these cool down right on the baking tray instead of transferring them to a cooling rack.
