INGREDIENTS:

  • 1 9-inch premade pie shell, uncooked

  • 4 Tbs butter

  • 3/4 cup light brown sugar

  • 3/4 cup real maple syrup

  • 3 large eggs

  • 1 tsp vanilla

  • pinch salt

  • 1 1/4 cups pecans

PROCEDURE:

Preheat the oven to 350 degrees.

Use a pan on the stove top to start melting 4 Tbs of butter and, after a minute or so, add 3/4 cup light brown sugar to the pan. Stir that in and let it dissolve as the butter is melting and, when you're happy with that, add 3/4 cup of real maple syrup, stir that in and turn the heat off.

he idea is to let that mixture cool down to around room temperature and, while that's happening, take a minute to whisk 3 large eggs in a mixing bowl with 1 tsp of vanilla and a pinch of salt.

Once the maple syrup has cooled down, add that to the bowl with the eggs and whisk that up but, before adding it to the pie shell, on a baking tray, add 1 1/4 cups of pecans to the pie shell, then pour the egg mixture on top of that and very carefully place it on the center rack of the preheated oven.

This will take around 30-35 minutes to bake and it will puff up a bit as it bakes and then settle back down as it cools. Let it cool down to set up and you can even pop it into the fridge after a bit, to let it really set up, and it's ready to slice and serve.

HINTS:

Use a regular pie shell not a deep dish pie shell for this. Serve with whipped cream or ice cream.
