six 6-inch soft corn tortillas
approx. 1 cup canned refried beans
approx. 1 - 1 1/2 cups grated cheddar or Mexican blend cheese
4 large eggs
1-2 Tbs vegetable oil for frying eggs
approx. 1/2 cup jarred or fresh tomato salsa
1/2 ripe avocado, cubed (or more to taste)
approx. 1/4 - 1/3 cup chopped fresh cilantro
fresh limejuice to finish (optional but good)
Count on three tortillas per serving and spread a little refried beans over two of each of those three pieces....then top the refried beans with grated cheese and top the remaining two tortilla shells with cheese too and place the tray they're on into a preheated 350 degree oven.
The idea is to let the tortillas and the refried beans warm up and let the cheese melt and, while that's happening, you can fry your eggs.
Add a little splash of vegetable oil to a large heavy bottomed nonstick pan on medium high heat and crack and add two large eggs per serving.
Try to keep the eggs separate if you can and gently flip them over and cook them to your liking.
Once the eggs are cooked to your liking assemble each serving by placing a refried bean tortilla on plate and topping that with one fried egg and a little salsa, topping that with another refried bean tortilla, another egg and a little more salsa...then finishing with a cheese tortilla on top, a little more salsa, diced avocado and chopped fresh cilantro.
You could even squeeze a little fresh limejuice over the top if you like.
Throw a few sliced pickled jalapeno peppers into the mix if you like a little heat.
