A gluten free Thanksgiving
As people stock their kitchens in preparation for Thanksgiving, some may be questioning whether they can eat some of the holiday's best-known foods. Our Megan Eaton spoke with a Saratoga restaurant catering to people with special diets.

SARATOGA SPRINGS, N.Y. --
Mozzarella sticks without dairy and cream puffs without, well, cream, may not sound like foods you'd want to try. But KD Fish Fry diners wouldn't be able to enjoy those delicious treats otherwise.
"I couldn't get a fish fry anywhere because of cross contamination or with the breadcrumbs they use," said Noreen Thompson.
"My older son had wandered in to this little fish fry. Gluten-free foods," said Dr. Susann Getsch.
When Dawn O'Donnell and co-owner Kelly Leeasco opened up their restaurant three years ago, they started out with a regular fried food menu until celiac customers came in asking for different options. People with celiac can't have gluten, which means no wheat, barley or corn, to name a few. O'Donnell, who also has celiac, got to work, creating gluten-free recipes to match each one of her menu items.
"Manufacturers don't really make products for fish fries, so I've been in the biz since I was 15 years old and I just came up with my own breadings and coatings," O'Donnell said.
But she didn't stop there. Each time a new customer came in with a different food allergy, like dairy or eggs, she'd figure out a way to create a recipe that looked and tasted as good as the regular version. KD Fish Fry uses separate fryers to make sure regular foods don't cross-contaminate, or mix with the allergen and gluten-free ones.
"When we came in and talked to her about the disease and she explained her kitchen you just feel safe. She will do anything she can to give you what you want," Thompson said.
"When a child cannot eat for fear of becoming ill of eating, that to me is very serious. That's why I appreciate what Dawn is trying to do. She cares," Getsch said.
With the holidays approaching, O'Donnell wants to make sure people can eat gluten and allergen free if they need, or want to. She's offering to make anything from turkey and stuffing to yams and dessert that customers can pick up before Thanksgiving.
"If you're going to a big gathering the chances of cross contamination are so great just to be able to bring your own meal and know you don't have to worry about what you're eating and just sit there and enjoy it," Thompson said.
